Crunchy Anjeer Gujiya

Ingredients for Dough

* All purpose flour - 2cups
* Ghee - 6tbsp
* Rawa - 3tbsp
* Milk - 1/2cup enough to knead

For Filling

* Scrapped Coconut - 1/2cup
* Koya - Homemade 1cup
* Cashew nuts crushed - 1 tbsp
* Almonds crushed - 1tbsp
* Raisins - 1/2tbsp
* Dates pitted and chopped - 2tbsp
* Cardamon powder - 1/2tsp
* Ghee - 1tbsp
* Oil for frying
* Fig - 1/2cup chopped

Method for stuffing

Heat ghee in a broad pan on medium heat, add koya and cook till it becomes light brown,fry coconut, pitted dates, roasted nuts, fig and mix with cardamon powder well and transfer to a plate to cool.

Prepare the dough

In a big bowl add all purpose flour, ghee, rawa, milk and rub it into bread crumb form add little cold water and knead it into smooth dough. Cover with wet cloth and set to 15 minutes.

Then divide into equal portions. Now roll out each balls into small puri. Spread a tbsp of stuffing and cover with another puri. Any desired shapes can be done. Now fry each gujiyas in hot oil until golden brown. Yummy gujiyas are ready.
