Ramadan Kheema Kanji (Mutton Mince rice Porridge)

Recipe:
Ingredients:

Rice: 1 Cup (Coarsely Grinded)
Moong Dal or Yellow Dal: ¼ Cup
Mutton Mince – ¼ cup (Can replace with Chicken mince or Mixed vegetables)
Oil or ghee – 2 tbsp
Cinnamon – 1 inch piece
Cardamom – 1
Cloves – 2
Fenugreek seeds- 1tsp (Vendhayam/Methi)
Onion – 1 medium size
Tomato – 1 medium size
Ginger Garlic paste – 1 tbsp (grind with ratio of 2:1 of Ginger: garlic)
Green chilies – 3
Mint Leaves – 2tbsp
Coriander Leaves – 2 tbsp
Ground Coconut – 3 tbsp
Salt – to taste
Maggi stock – 1 cube for extra taste (optional)
Hot Water – 4 cups or as required thickness

Method of Preparation:

1.Grind rice coarsely using blender (like broken rice), Wash thoroughly in water, roast moong dal on low flame and soak in water for half an hour.
2.Heat up deep casserole, add oil/ghee, cinnamon, cardamom, cloves and Fenugreek seeds
3.Add Chopped Onions and fry till golden brown, add Ginger Garlic paste, minced mutton, moong dal and fry till raw smell goes. Now add chopped tomatoes, green chillies, chopped mint leaves and coriander leaves. Sauté till tomatoes cook well. Add Maggie stock cube at this stage (Optional)
4.Add coarsely ground rice and fry in the masala, now add hot water and salt. Mix thoroughly with wooden ladle. Keep on mixing till the rice and dal becomes mushy. Finally add ground coconut an allow it to boil another 10 minutes.

Yummy Kheema Kanji ready to serve for Iftar. It tastes yummy and good treat for your taste buds and gives more energy for the fasting people.
